Succotash derives from the Narragansett word M'sickquatash which means both "fragments" and "whole boiled corn". It's usually best at the height of summer when the farmer's market is full of corn, tomatoes, peppers. This will pair well with Spicy Polenta with Chile Paste and Guacamole.
